Although it may seem unconventional, here I am. Apart from working as a personal trainer and fitness group instructor, I have a strong interest in baking cookies, which may seem contradictory to my profession. However, I have been baking cookies and biscuits for Christmas since my teenage years. I usually bake them as a token of appreciation for others and my family and friends. I have been asked to share the recipe for the Christmas Gingerbread Biscuits, so here it is:
Ingredients:
100 g butter (unsalted)
2-4 tbs honey
2 eggs
140 g icing sugar
400 g flour
1 tsp baking soda
2 tbsp gingerbread spices
2 tbsp cocoa
Flour for sprinkling
Egg for brushing
Icing:
1 egg white
Pinch of salt
150-200 g icing sugar
1 tsp potato starch
1-2 tsp fresh lemon juice
Time of preparation: 90 min
Process:
Start by melting the butter in a saucepan, then combine it with the honey. In a separate bowl, whisk the eggs with the sugar until they become foamy, and slowly incorporate the butter-honey mixture.
In a bowl, sift the flour and mix it with baking soda, gingerbread spice, and cocoa. Gradually add this mixture to the foamy eggs, stirring carefully. Knead the dough until smooth and refrigerate for at least 30 minutes.
Divide the chilled dough in half and roll each portion into a 3 mm thick sheet on a floured surface. Cut out desired shapes and place them on a baking sheet lined with parchment paper.
Preheat the oven to 170°C and bake the gingerbread until golden, approximately 10-12 minutes depending on size. For a shiny finish or icing decoration, brush the cookies with beaten egg while still warm. A silicone or feather brush works well for this step. Allow the gingerbread to cool.
For the frosting, beat egg whites with sugar. Sift the sugar twice and gradually mix it into the egg whites along with starch and lemon juice. Adjust sugar quantity based on egg size and desired icing consistency. Use lemon juice to thin out the glaze if needed. Transfer the icing to a pastry bag with a fine decorating tip to decorate the gingerbread cookies.
